To conclude their studies in cooking, Sussex Academy students visited a number of markets and restaurants April 16 during a walking food tour of South Philly.
Earlier this spring, students in Cameron Smith’s AP Spanish class learned about Latin American cuisine and followed recipes to make several traditional dishes.
In Philadelphia, students met restaurateur Cristina Martinez, a Mexican chef whose restaurants, Casa de México and South Philly Barbacoa, they had studied in class. Martinez has been featured in Duolingo and Apple podcasts, and Netflix’s Chef’s Table, and is a James Beard Award winner.
“Her story of overcoming adversity was inspirational,” Smith said. “Despite having difficulties with immigration and the loss of a son, she has managed to soldier on by putting her whole heart into her restaurants. She encouraged our students to take advantage of every day to live life to the fullest.”
At Casa de México, students enjoyed Martinez’ signature dish, barbacoa tacos, before proceeding to Old City, where they explored the Liberty Bell and Independence Square before finishing the day at Reading Terminal Market for treats and souvenirs.
“A big highlight for many was spotting 76ers star Tyrese Maxey,” Smith said. “He was grabbing lunch at a counter in the market. This was the icing on the cake for AP Spanish students who studied and cooked their own dishes in Spanish class, including tortillas, pupusas, sweet plantains and guacamole.”
On the way home, students discussed what they learned, Smith said, and completed reflection pieces inspired by the life and work of restaurateur Cristina Martinez and their own career goals.
Sussex Academy’s World Language department is looking for sponsors to support the continuation of this project for the 2025-26 school year. The entire cost of the trip is $1,600, which covers transportation to Philadelphia and class supplies for the cooking unit.
