Alphabet Soup

I haven’t made alphabet soup for at least 40 years when my children were young. In those days alphabet letters floated in chicken broth with chunks of white meat and a few vegetables. Just this week my granddaughters requested that I make alphabet soup. What a surprise to find a plant-based recipe for Alphabet Minestrone Soup on the pasta box! We tweeked the recipe by adding chopped greens while eliminating the oil. Neither meat nor meat/bone broth were necessary to make this flavorful and satisfying soup.

How I wish I had known as a young parent what I now know about the health benefits of fruits, vegetables, beans and whole grains for growing children. Although I was an ardent follower of Dr. Spock, I somehow missed his powerful message of the importance of Plant-Based eating. 

Lessons learned the hard way over many years have opened my eyes to the enduring wisdom of Spock’s claim. In retrospect, we know that many forces, then and now, have been conspiring to mislead and confuse the public about valuable nutritional information. Those forces are called the MEAT-MEDICAL-PHARMACEUTICAL-GOVERNMENTAL COMPLEX. Where there are profits to be made, accurate information is suppressed and all health suffers.

At the same time, other forces are working to educate, inform, heal and restore human, animal and environmental health. Here are some of those healing forces I turn to as resources for support and accurate evidence-based scientific and medical information:
