Time for a little chat about chicken.

The National Chicken Council just released its annual Chicken Wing Report, which projects Americans’ consumption of the unofficial menu staple of Super Bowl Sunday – the chicken wing. NCC’s 2018 report projects that fans will eat 1.35 billion wings during Super Bowl weekend, an all-time high, enough to circle the earth 3 times.*

Chicken is without a doubt one of America’s favorite animal foods. But no one I know wants to live anywhere near a chicken farm or processing plant. In fact where I live on the DELMARVA PENINSULA, whole communities are up in arms over polluted wells, waterways, land and air from poultry industry waste. However, we can’t be too negative lest we bite the hand that feeds the state coffers, for the chicken industry is big business in my state and that means big bucks for big players and lots of fowl, low-paying jobs. 

So if we continue to consume all that fat-laden, fecal-contaminated dead flesh, we’ll kill 2 birds with one stone, so to speak, by enriching the state and keeping doctors offices and hospitals full of the country’s heaviest diabetic, cancer and cardiovascular disease patients. Yes, according to a number of highly regarded studies cited by Neal Barnard, MD, of the Physicians Committee for Responsible Medicine and Michael Greger, MD, of nutritionfacts.org, chronic disease development is directly related to poultry consumption. And ever increasing chronic diseases are the best way to create jobs for the medical and pharmaceutical industries because those patients never get better—unless—unless patients decide to take charge of their own health by dropping chicken and other animal products from their diets and adding lots of fruit, vegetables, beans and whole grains.

But then how will fans celebrate the Super Bowl without wings?!? Not to worry, here is a great “wing” recipe from the Esselstyns, finger licking good without the chicken!
