Bacon & Bourbon Bread Pudding

Ingredients:

  • 2 tbs butter
  • 10 cups cubed brioche bread
  • 1 cup chopped pecans
  • 4 cups half-and-half
  • 1 cup milk
  • 5 eggs, beaten
  • 1 cup packed dark-brown sugar
  • 3 tbs bourbon
  • 3 tbs bacon salt
  • 2 tsp pure vanilla extract
  • 1 tsp ground cinnamon
  • 1/2 tsp kosher salt
  • 1/4 tsp grated nutmeg

Directions:

Butter a 13 by 9 in baking dish, and put the cubed brioche in it. Sprinkle with the pecans. Whisk together the rest of the ingredients into a large bowl. Pour the custard mixture over the bread in the baking dish, giving the bread a stir to make sure it's coated. Let the pudding sit for 1 hr, so the bread can fully absorb the milk. Preheat oven to 350 degrees. Bake for 50 minutes. Let it sit for 10 minutes before serving.
