After taking the local farmers market scene by storm, Gather owners Isabella and Matthew Walsh are opening a bakery on Rehoboth Avenue.

The Walshes specialize in the South and Central American desserts called alfajores, which are two shortbread cookies sandwiched together with a creamy, caramel-based filling called dulce de leche. They also offer savory biscuits, shortbread cookies, tres leche and jars of their dulce de leche filling.

The bakery will be located at 239 Rehoboth Ave. – the one-story cinder block building that’s been several businesses over the years, most recently the high-quality home goods operation Oliver Whitby. A small sign was recently hung in the window announcing the new adventure for the Walshes.

Isabel said the hope is to be open by the end of the year. Isabel hails from El Salvador and comes from a family of bakers. A kitchen needs to be built, estimates made and construction permits applied for, she said.

“We are at the beginning of a long process,” she said.

While waiting for the store to open, the Walshes, and their offerings, will continue to be at local farmers markets. Through the winter, they’ll be at the farmers market in Crofton, Md., and at Schellville during special events and holidays. Starting in May, they’ll be at the farmers markets in Lewes and Rehoboth Beach in Delaware, and Berlin and Crofton in Maryland. In addition, customers can email the Walshes for custom orders or special requests.
