Flippin’ Waffles opens up shop in the Cape Region

Years in the making, owner Mary Teletchea serving a breakfast decadence

It took months of tweaking the recipe and the industrial waffle iron, but Flippin’ Waffles owner Mary Teletchea said she, her wife Lori and stepdaughter Mackenzie knew immediately when they had the taste they were going for.

“We tried and tried and tried. Then we sat down one time and all three of us looked at each other and knew this was the recipe that was going to be used,” said Teletchea. “The secret is something from a chocolate chip recipe that keeps it crispy on the outside and soft in the middle.”

Teletchea, a physical therapist with 25 years’ experience, opened the new food truck to the Cape Region four weeks ago, but the concept was a while in the making.

Teletchea, who grew up outside Philadelphia and ate at corner stands all the time, said her dad spurred the idea years ago after he returned from a trip to Ireland, saying he wanted to open a food truck at the Cliffs of Moher. That never happened, but the idea always stuck with her, she said.

A while later, Teletchea was in Utah visiting friends when she came across a food truck specializing in waffles. That was four years ago, but again, she said she never lost interest.

“Not being a chef, I wanted to do something that would be fun and manageable, and I thought to myself that this was something I could do,” said Teletchea, adding that her dad would be “stoked, excited and proud of the food truck.”

As the name suggests, the menu for Flippin’ Waffles is focused on waffles. There are 4 by-6-inch waffles and waffle pops – foot-long, skinny waffles on a stick. There are a number of different fruit options and half a dozen syrup toppings. There are waffle sundaes and also waffle chips and dip – think chips-and-dip – in the works that will be bites of waffles with a cannoli filling dip. Each waffle is made to order and takes about five minutes.

“We want people to keep coming back,” said Teletchea.

Flippin’ Waffles’ next event will be 9 a.m. to 2 p.m., Saturday, Sept. 24, at the Conley’s United Methodist Church Fall Festival, 33106 Jolyn’s Way, Lewes. They will also be at Loakal Branch Brewing Co., 501 N Bi State Blvd., Delmar, for a brunch beer release 11 a.m. to 2 p.m., Sunday, Sept. 25.
