The Foxhole to open in Milton

Suburban Farmhouse owners set for busy new year

Federal Street in Milton is about to see big changes in 2020, as the Dead Pig Tavern will give way to a new tapas-style restaurant, The Foxhole.

It is the latest project from Suburban Farmhouse co-owner Kristen Latham, and will be her third venture in the Federal Street commercial block, along with her retail store, The Speckled Roost, and Suburban Farmhouse. 

Latham, who owns the ventures with her husband, Marc, said they will take over the building at 102 Federal St. on Wednesday, Jan. 1, with an eye toward opening Saturday, Feb. 1. She said she has already hired Chef Jim Lewis, who had previously worked in restaurants in Berlin, Md. 

“What we want to do over there is heavy appetizers,” Latham said. “Charcuteries. Tapas. A menu that will change weekly. Kind of like a little pop-up. We want it to be something that is affordable so that you can come in once a week.”

In addition, she said, the intention is to have a full beer, spirits and wine list. Latham said she was looking for The Foxhole to have a funky, contemporary atmosphere that’s not stuffy or formal. “Not cut-off jeans and a tank top, but not a suit and tie,” is how she describes the atmosphere she wants. 

As for the name, Latham said she chose The Foxhole because she thought the space was “like a little hole in the wall.”

Latham said the new restaurant is part of a series of moves coming in the new year. She said she would like to get Suburban Farmhouse back to its roots as a coffee/breakfast spot and move her pizza-making operation, the Dough Bar, to its own separate location. 

“It was all getting muddled,” Latham said of Suburban Farmhouse. “To me, taking the Dough Bar and giving it its own identity and taking it out of the Farmhouse gives it a chance to shine. It allows the Farmhouse to go back to the roots of what it has been all along.”

At first, the Dough Bar will be relocated inside The Foxhole, but eventually, Latham is looking to get the Dough Bar its own location. While they do not have a building finalized, Latham said she hopes to be on Federal Street in the same area as her other ventures.

Among the changes set for Suburban Farmhouse, Latham said, are full table service, omelets and eggs over easy and a build-your-own yogurt bar. “We’re ready to step up a notch,” she said.

Latham said she plans to start delivery service on pizzas and lunch specials in January, seven days a week, up to five miles outside Milton. She said her intention for the Dough Bar is to serve subs, steaks, melts and sandwiches, as well as pizzas. 

While her plans are ambitious - “Am I crazy?” she asks - Latham views a vibrant restaurant and retail scene as key to downtown Milton, and she wants to do her part. “The little town needs it. If you build it, they will come - everyone keeps telling me,” she said. “I love this town. I’m very much about the community and building what they ask.”

The Foxhole will be open Wednesday through Sunday, 4 to 10 p.m.
