Locos Pink Tacos now serving the Cape Region

Owners Jonathan Ruiz and Alicia Deck fulfill years-long dream of opening taqueria

Fulfilling a years-long dream, Alicia Deck and Jonathan Ruiz have opened Locos Pink Tacos, a taqueria food trailer serving the Cape Region.

“We opened April 1 and it’s been pretty busy,” said Deck.

Deck, who has more than a decade of restaurant experience, is from Pennsylvania. Ruiz was born and raised in Lewes, and has been honing his culinary skills at home for just as long. The two are engaged.

“We both have a passion for cooking,” said Deck.

The Locos Pink Tacos menu keeps things simple and is inspired by recipes from Ruiz’s grandmother.

“It’s all handmade, but we’ve added a little twist of our own,” said Ruiz.

Starters include seasoned fries with carne asada, oaxaca cheese, cilantro; and Florida Bites, which are alligator chunks that are battered and fried. The gator is shipped from Florida.

“We wanted to do something a little different,” said Deck.

The menu includes several taco options. There’s the Florida Man, which is the battered alligator bites put in a taco; the Hairless Mexican, which is a plant-based carnitas; and the Ankle Biter, which was inspired by the couple’s chihuahua.

“It’s a little spicy and, like a chihuahua, it has a little bite at the end,” said Ruiz, smiling.

The menu also has tortas, a Mexican sandwich, and chicharrones, which are pork rinds.

As for the pink tacos, Deck said, as far as she knows, they’re the only ones serving pink tacos on the East Coast.

“We’re trying to do something that’s a little different,” said Deck. “Something to try and attract a younger crowd.”

The Locos Pink Tacos trailer is just the beginning for Deck and Ruiz. They’re working on a full-sized food truck now. Hopefully, it turns into a brick and mortar restaurant, said Deck.

For now, Locos Pink Tacos is located in the parking lot next to PetSmart, on the north side of Route 1 outside Rehoboth Beach. Hours of operation are 11 a.m. to 7 p.m., Wednesday through Saturday, and 2 p.m. to 8 p.m., Sunday. As summer nears, they will open on Mondays.
