Cookies for Breakfast

Don’t cook? No problem. Don’t bake? No worry. These 2-ingredient cookies are quick, easy, nutritious and delicious. No added sugar, salt or oil. No meat or dairy products. Just good wholesome fruit and whole grains or coconut.

Here’s all you need for BANANA OAT COOKIES: 1 ripe banana and 1 cup of any kind of oats. If you want more than a dozen small cookies, double or triple the recipe. You may also add a shake of cinnamon, a few drops of vanilla, or a handful of raisins or nuts. Next, drop the ingredients into a processor until “batter” is ready to spoon onto parchment paper-covered baking sheet. Bake 20-25 minutes at 350.

Here’s all you need for BANANA COCONUT COOKIES: 1 ripe banana and 3/4 cup of unsweetened shredded coconut. Process ingredients until batter is spoonable onto parchment paper baking sheet. Bake at 350 for 20-25 minutes.

Eat and enjoy knowing these cookies are good for adults and children for breakfast, lunch and dinner.
