I thought I knew how to cut a watermelon, but on a recent visit my granddaughters taught me otherwise. When I was a child, the only way to cut watermelon was in wedges and the only way to eat watermelon was outside where it could drip on the ground and we could have seed spitting contests. But what fun is a seedless watermelon?
Here’s what my granddaughters instructed me to do:
1. Cut the watermelon in half.
2. Then cut the watermelon in quarters.
3. Make one inch slices in each quarter through the fruit but not through the rind.
4. Cut through the slices at a right angle on each side of the quarter piece resulting in small cubes.
5. Slice around the inside of the rind on all sides to release the cubes of fruit.
6. Voila! Watermelon cubes fit for fingers, fruit salads, or watermelon pico de gallo (http://capegazette.villagesoup.com/p/spotlight-on-plant-based-eating/1361580)
