Stuff a Squash Not a Bird

Pick a squash from the great variety available this season. Then wash it off, poke it with a sharp knife and pop it in your microwave for 6 minutes/pound. When it’s cool enough to touch, cut it in half, scoop out the seeds and stuff! Your stuffing can be anything you like from roasted Brussels sprouts to bread and onion prepared stuffing. Pop in microwave or oven to heat for great eating. Why not stuff enough for the whole family.

Who needs a bird for dinner? Give thanks for the abundance of plant-based foods that fill your plate with color and flavor. Everything you need for strength and nourishment comes from plants. Leave the birds on the farm and in the wild. You will reduce your carbon footprint, reduce environmental degradation, reduce antibiotic overuse, reduce human exploitation, reduce animal cruelty and reduce human demand for animal products.

Eat plants with gratitude. Happy Thanksgiving!
