Highlights of Week #2 of our EAT FOR THE PLANET class included an interview with Miyoko Schinner, creator of cashew-based artisan cheeses. Then there was cheese tasting! What a treat! No one need say “But I could never give up cheese...”for here it is—dairy free, hormone free, cruelty free and environmentally friendly cheese! Delicious as it is, high fat content makes this cheese an occasional treat, not a dietary staple.
We purchased our Miyoko cheese on line, but it is available locally in select grocery stores.
