It's a Star Wars May 4 today, so instead of giving you a quick tip for fitness, I decided to jazz it up with a Star Wars and Cinco de Mayo recipe instead.
Work your triceps this weekend while bringing food and drink to your mouth!
This recipe comes from my taco vault. My family will tell you I am the taco queen - we enjoy a variety of fresh tacos each week.
We often thin down recipes we find online through Weight Watchers and other sites, since we are still slimming down thanks to the program.
Without further ado here are the Cinco de Mayo cilantro-lime fish tacos:
Cilantro Fish Tacos
Serving Size: 2 tacos
Ingredients:
1 lb tilapia, rinsed and dried
Olive oil
Onion, diced
3-4 Garlic cloves, minced or whizzed around the food processor
Handful pickled jalapenos chopped
Tomatoes, diced
Handful fresh cilantro, chopped or in food processor with garlic
Lime, squeezed for juice
salt and pepper
8 tortillas - I use only flour tortillas in my house
Avocado, sliced (optional)
Extra lime wedges for garnish
Directions:
Heat olive oil in a skillet. Sauté onion until soft, then add garlic. Mix well on medium heat.
Add in tilapia filet; cook until it becomes flaky, then add tomatoes, jalapenos, lime juice and cilantro, as well as salt and pepper to taste. Sauté for about 5 minutes, while flaking apart fish so it becomes incorporated with the other ingredients. Serve with tortillas warmed briefly in a dry skillet. I squeeze a bit more fresh lime juice over the filling just before serving.
I serve my tacos with guacamole (or fresh avocado if I can find it), fat-free sour cream, pico de gallo and perhaps, margaritas!

Jedi Mind Trip
Combine coconut rum with pineapple juice, melon liqueur and a splash of lemon-lime soda.
For the kids, leave out the liquors and have them enjoy a pineapple spritzer. Yum!

The Star Wars Lightsaber workout:
Stand with feet apart on floor. Arms at side, prepare to do battle with Darth Vader.
Start by stretching out your muscles. You don't want a muscle cramp to be the reason you let Vader win.
Take out your lightsaber and lunge forward to begin the duel. Switch from left to right leg as you lunge at the enemy. After 10-15 repetitions, try a new angle and swing your lightsaber down on top of his helmeted head. Strike from above for about 10 repetitions.
Have fun and create your own lightsaber choreographed routine. Work up a sweat, then go enjoy your tacos and Jedi Mind Trip drink.
