Modern Mixture Too opens in Milton

Innovative international cuisine pairs with laid-back, rustic setting

Modern Mixture Too is open at the corner of Federal and Union streets in the heart of Milton.

Less than three years after Leo Cabrera, a native of Mexico City, brought his blend of innovative international cuisine to downtown Rehoboth Beach, the Modern Mixture owner said his new location in Milton will be the same, but different.

There is nothing new on the menu, he said, but the Milton location has a warm, rustic feel as well as an eight-seat wooden bar, five booths and outdoor seating on Federal Street.

"It has been pretty steady here, and it's very laid back, almost like Rehoboth in the off-season," Cabrera said.

The staff at Modern Mixture Too said things are taking off in Milton based on the formula of fresh ingredients, Mexican flavors, healthful chopped salads and Mediterranean specialties Cabrera first put together in Rehoboth.

"Response has been very favorable," bartender Marco Morales said. "They've enjoyed the food, and they like the blend, so there has been positive feedback."

The new restaurant features two flat-screen televisions, a full bar, draft beer and the same cheery lime-green walls as the downtown Rehoboth's eat-in/carry out location.

Opening the Milton location hasn't come without its challenges, Cabrera said, and finding good help for both locations in the middle of summer has been nearly impossible.

For that reason, Cabrera said, he's enlisted family and friends to help, and he recently began to close the Rehoboth restaurant early to focus his energy in Milton.

"We are working out all the kinks to make both locations consistent," he said. "It's hard; I cannot be two places at once."

Meanwhile, patrons such as Milton resident Debbie Bailey are pleased to have the new downtown dining option with its emphasis on fresh, healthy international food.

"I like the Rehoboth store, but this is my first trip here," Bailey said as she dined on the front porch with friends visiting from Pennsylvania. "The menu is awesome in Rehoboth, so it can't go wrong here."

Cabrera said he's happy with the response and considers this month to be a "soft opening" for Modern Mixture Too.

"I don't do it because it is popular," he said. "I do it because it feels good to give people a meal they are going to love and enjoy."

Cabrera said customers should look forward to a formal grand opening party in the coming weeks.
