PICKLES AND A POTLUCK

What better way to celebrate my 75th birthday than with spicy fresh homemade Refrigerator Pickles and a fabulous Plant-Based Potluck!

I made the pickles 3 days earlier from the abundance of cucumbers in the backyard garden. They were fun, quick and easy to make. And the results are both beautiful and delicious.  The recipe, borrowed from the June/July 2015 AARP magazine, can be found on p. 58 under BRINE AND DANDY.

And here’s my favorite recipe for a Perfect Plant-Based Potluck:

Invite a group of hungry friends.

Ask each to bring a whole food plant-based fat-free dish to share.

Add a little wine and mix.

Now make a toast to vibrant health and delicious eating!
