By adding fresh or frozen greens of any kind--kale, spinach, turnip, collard, Swiss chard, bok choy--we boost nutritional value and enhance flavor. We sautéed our greens in wine with the onions so they would blend into the mushroom sauce. Then we served the Stroganoff on steamed whole grain brown rice. It would also be good on pasta, potatoes or sguash.
