My appreciation for the amazing documentary film FORKS OVER KNIVES runs deep and wide. When I first viewed it in 2011 while recuperating from a heart attack, my life was literally turned upside down. I read everything I could get my hands on by the doctors featured in the film (Campbell, Esselstyn, McDougall, Barnard, Lisle, Heidrich). As a result, my husband and I completely changed our way of eating to a whole food plant-based diet. I immersed myself in workshops, seminars, and conferences and even earned a PLANT-BASED NUTRITION CERTIFICATE from the T. Colin Campbell Center for Nutrition Studies and eCornell. All of these steps prepared me to teach others about the power of a plant-based diet to prevent and reverse such chronic diseases as diabetes, heart disease, some forms of cancer, obesity, arthritis and autoimmune diseases to name only a few of the benefits. But that’s not all--while restoring personal health, we are also reducing animal cruelty and environmental degradation. What an extraordinary outcome! And the possibilities continue…
FORKS OVER KNIVES has created an inspirational educational website and Facebook page accessible to the public, an excellent recipe app, and a variety of helpful books for guiding readers toward delicious plant-based eating for disease prevention and reversal. At that time the Library is sponsoring a 4-part series which I am presenting on Plant-Based Eating. An Introduction to Plant-Based eating will be offered on March 16. A showing of the 90 minute film FORKS OVER KNIVES will be on March 23 and cooking demos will take place on the two weeks following. The series is open to the public at no cost.
