Welcome to our egg-free kitchen. Our 5-year old home has never seen an egg, (nor meat, dairy and oil for that matter), for we live a Plant-Based lifestyle. When my husband and I changed our diet, we discovered that the elimination of meat was just a partial solution to our health issues. The saturated fat, cholesterol, and animal protein in fish, poultry, eggs and dairy are also highly problematic for human health and play a critical role in the causation of cardiovascular disease, cancer, diabetes and obesity. (Nutritionfacts.org, Nutritionstudies.org, Pcrm.org) So we eliminated all animal protein and have never looked back. Then we realized no animal need suffer for us to be healthy.
Over the years we have come to understand that everyone and everything--human health, animal health and even environmental health--benefits from our decision to come out from under “livestock’s long shadow”.
Where do we get our protein? That was our big question when we dropped all animal products, but we learned that a varied diet of vegetables, fruits, beans, whole grains, with a few nuts and seeds provides all the nutrients we need to maintain optimal health and weight with the exception of B12 which we get from an over-the-counter supplement.
How do we know what to believe with all the confusing and contradictory information about diet? We do our homework--studying the peer reviewed medical and scientific literature, reading books from reliable sources, crisscrossing the country attending courses and conferences and meeting the movers and shakers in the Lifestyle Medicine Movement--Barnard, the Campbells, the Esselstyns, Greger, Heidrich and the McDougalls. That is our style of learning, but others do their homework at the kitchen table with a few good cookbooks from Neal Barnard, M.D., president of the Physicians Committee for Responsible Medicine (PCRM.ORG) or The Esselstyn’s PREVENT AND REVERSE HEART DISEASE books, or the 2 PLANTPURE NATION cookbooks by Kim Campbell, to name only a few. These invaluable guides tell us how to make old and new favorite dishes simply and quickly with fresh, canned or frozen ingredients.
We can't rave enough about the fabulous food we eat and the wonderful new friends we've made on this amazing journey in wellbeing. Potluck parties bring together beginners and experienced Plant-Based Practitioners. What a great way to learn from and support one another toward sustainable, healthful living, both personal and global.
