Last summer I finally caught up with Rip Esselstyn. I'd seen him saving lives in the amazing documentary film FORKS OVER KNIVES. I'd read his inspiring and informative books ENGINE 2 DIET and MY BEEF WITH MEAT. I'd met his Mom and Dad, Dr. Caldwell and Ann Esselstyn, at the Cleveland Clinic and read their lifesaving book PREVENT AND REVERSE HEART DISEASE. So it was a thrill to meet Rip at long last at PLANTSTOCK on the family farm in upstate NY.
So why would this former meat and dairy-devouring grandmother be excited about meeting this intelligent, handsome, dynamic, triathlete and former firefighter?
- Because he is one of the “Leading Lights” in the Plant-Based Movement!
- Because he helped me understand the connections between diet and health, footnotes and all!
- Because he walks the talk!
In a nutshell here are some of my learnings from Rip:
- Meat (chicken, fish, red meat--all animal flesh) consumption eventually sickens and even kills
- Rip considers Milk “liquid meat”
- Cheese, “congealed meat”
- Yogurt, “runny meat”
- Cottage cheese, “mottled meat”
- Ice cream, “frozen meat”
- All dairy products harbor the animal protein CASEIN, which T. Colin Campbell, Ph.D., author of THE CHINA STUDY, refers to as the number one chemical carcinogen in the American diet.
- Whole Plant-Based Foods nourish and heal.
