We love Chef LEO’S LUCKY LUSCIOUS LAUDABLE LASAGNA! LUCKY, because my friend Sally happened, by chance, to get the last piece custom-created for someone else. LUSCIOUS, because he re-created it for us--a delicate layering of sliced zucchini, summer squash, beets, rice noodles and a rich creamy nondairy cashew sauce--plant-based, gluten free, tomato free. LAUDABLE, because we liked it so much we ordered more to take home for our husbands and ourselves for dinner!
