Will Tuttle, Ph.D., author of THE WORLD PEACE DIET, reminds us that “the choices we make about food are leading to environmental degradation, enormous human health problems and unimaginable cruelty toward our fellow creatures.” We have been struggling with these very issues for the past 9 weeks and so today have chosen a cruelty free menu for our penultimate class in Plant-Based Eating for Personal and Community Health. Madeleine Tuttle, Will’s wife, inspired us via her guide to INTUITIVE COOKING http://www.worldpeacediet.org/images/intuitivecooking.pdf
We whipped up a batch of polenta adding a can of pumpkin purée and a few shakes of nutritional yeast after the polenta had thickened. In the electric skillet we water sautéed onions, garlic, zucchini then added tomatoes, chopped spinach and herbs. While the 2 pots simmered, we viewed an interview with Will Tuttle—remarkable thinker, educator, musician and former Zen monk—in anticipation of his visit to our community to speak at Thanksliving! http://vegrehoboth.org/uncategorized/thanksliving/ Yes, Will and Madeleine Tuttle are coming to Lewes-Rehoboth, Delaware in a few weeks! Join us to greet them at Browseabout Books https://www.facebook.com/events/893235480879734/?ti=icl
