Pumpkin Polenta and Peace

Will Tuttle, Ph.D., author of THE WORLD PEACE DIET, reminds us that “the choices we make about food are leading to environmental degradation, enormous human health problems and unimaginable cruelty toward our fellow creatures.” We have been struggling with these very issues for the past 9 weeks and so today have chosen a cruelty free menu for our penultimate class in Plant-Based Eating for Personal and Community Health. We whipped up a batch of polenta adding a can of pumpkin purée and a few shakes of nutritional yeast after the polenta had thickened. In the electric skillet we water sautéed onions, garlic, zucchini then added tomatoes, chopped spinach and herbs.
