Egg, a popular breakfast and lunch spot in downtown Rehoboth Beach, is expanding its kitchen and dining space.
It’s located in the former McQuay’s Market immediately after crossing the Lewes-Rehoboth Canal drawbridge into town, and owner Melissa Postles opened Egg in November 2016. There will be a few extra tables, but the expansion is mostly about making the kitchen bigger, she said.
“We outgrew the kitchen the first week we opened,” said Postles.
It’s hidden well because of the design, but the restaurant is located in a larger building with multiple condo units. The current restaurant space is one of the units. Postles said the business purchased the condo unit immediately adjacent to the rear of the restaurant. This extra space will allow the walk-in refrigerator to be pushed all the way to the back and give the kitchen crew a much more usable space, she said.
As for the additional dining, Postles said the expanded area will be straight back from the front door, down a hallway that will be created between the bathroom entrances. There will be four or five extra tables, which should help reduce the wait time, said Postles.
At this point, Postles said she’s just waiting for permit approval from the city and county. The plan was to begin work Feb. 1, she said.
Postles said to complete the expansion, the restaurant will have to be closed for a short period of time. Fortunately, she said, the new space is separated from the old space by a wall, so a lot of the work can be done before the brief closure needs to take place.
“It’s going to be a minimal amount of time,” said Postles.
There have been inquiries into opening a highway location, or a second location in Lewes or Bethany Beach, but Postles said she’s not interested.
“I’m determined not to go out onto the highway,” said Postles. “I want to keep Egg small and continue to concentrate on what we’re doing here.”
After work is complete, Postles said the restaurant will continue to have the same business hours of 7 a.m. to 1 p.m., daily.
