Chocolate Truffles for Mothers Day

All it takes are 4 ingredients to make these melt-in-your-mouth CHOCOLATE TRUFFLES. Start with the secret ingredient--one cup of canned white beans, well drained. Add to food processor with 3 Tablespoons each of cocoa powder, defatted peanut powder, and maple syrup. Process until smooth and stiff enough to roll a dozen or so small balls. Coat with chopped nuts or toasted coconut for variety.

I hope you have better luck than we did saving a few for the MOMS in our life!

This great tasting treat is a revised recipe from Lindsay Nixon's HAPPY HERBIVORE. No dairy, no oil, no cooking, no guilt--well, maybe a little, since we ate a whole batch in one sitting!!
