This refreshing summer “salad soup” is so easy to make that even a one-armed granny can pull it off without help! But that’s not half the story. So it’s no meat OR dairy for me. I’ll be feasting on lots of tomatoes, peppers, cucumbers, squash, kale, onions, garlic, lime along with fresh corn on the cob, baked potatoes, grilled mushrooms, heaps of baked beans and fresh peaches the rest of this overheated summer.
