Ease into the new year with this quick and easy Asian pasta bowl. Start with your choice of pasta. I prefer whole grain angel hair, but you might prefer another variety. Get your pot of water boiling and add a handful of dry pasta for each person who will be eating with you.
Angel hair takes just six minutes boiling time. That gives me six minutes to chop, grate and shred as many vegetables as I can gather from the refrigerator. Today I found onions, carrots, radishes, purple cabbage, and don’t forget the ginger. I even had some broccoli stems that I peeled and grated. No need to measure. Just make a big salad.
When the pasta is ready, drain it and add to your salad bowl while it’s still steaming. Stir well and get ready for your dressing. Add a few tablespoons of rice vinegar directly to the bowl. Shake 1/4 to 1/2 cup peanut powder directly into the bowl. Add a tablespoon or so of soy sauce or Braggs Aminos. Top your bowl with a sprinkle of pepper flakes. Stir well. Adjust your seasonings and enjoy with some chopped peanuts.
I could eat this Asian Salad Bowl every day. And each day’s bowl is different. Change the pasta, change the veggies, add some tofu or Tempe plain or crispy, in chunks or shreds.
