If you’re looking for quick and easy, delicious and nutritious Plant-Based eating, here’s a winner. I call it the Slice & Spice, Roast & Relax approach:
- Pick your favorite veggies/fruit
- Slice or chunk as able (my husband sliced the cabbage, but I did the rest one-armed!)
- Spice as desired (I used Trader Joe’s salt-free blend 21 Seasoning Salute and a spritz of Bragg’s Aminos)
- Roast on trays at 400 for 1/2 hrs or so
- Relax & enjoy the aroma of roasting veggies
Now fill your plate with veggie variety, and save some for salad toppers, sandwich fillers, pizza enhancers!
