No Oil, No Problem

We eliminated oil from our diet 6 years ago when we discovered the extraordinary health benefits of PLANT-BASED eating while I was recuperating from a heart attack. In addition to avoiding all meat and dairy, eggs and fish, we stopped eating all oil--corn, canola, peanut, walnut, sesame, coconut and even OLIVE OIL! We don't cook with it, bake with it or put it on salads! Here's why:

  • All oils are highly processed.
  • All oils are 100% fat causing rapid weight gain.
  • All oils contain next to no nutrients. 
  • All oils cause inflammation.
  • All oils cause sluggish blood flow.
  • All oils promote disease and impair health.

So what do we eat? We enjoy a wonderful variety of vegetables, fruits, beans and whole grains, nuts and seeds--raw and cooked--with herbs, spices, vinegars, mustards and salsas.

And how do we cook without oil? Instead of sautéing with oil, any other liquid will work fine--broth, vinegar, soy sauce, water, wine. For baking, we use applesauce or mashed bananas to replace oil and line baking pans with parchment/baking paper.

Here's a favorite dressing good on vegetables, raw or cooked: Mix together equal parts mustard, salsa and Balsamic vinegar. Pour over vegetables and enjoy.
