Salsa for Everyone

Here’s a salsa anyone can make in a jiffy. It will whet your appetite, satisfy your sweet tooth, put zing on your tongue and flavor your beans and rice! That’s what we made in our new class called E-MEALS FOR EVERYONE.  E stands for EASY, EXCELLENT, ECONOMICAL, ETHICAL, and EARTH-FRIENDLY.

For the next 4 weeks, participants in the Lewes, Delaware, Osher LifeLong Learning PLANT-BASED EATING class will be exploring the possibilities of creating quick and easy meals with basic wholesome ingredients. We’ll be avoiding all animal products for our health and theirs. We’ll also be mindful of the impact of our food choices on the environment.

Our guide will be the E-MEAL chart pictured below. Each week we’ll draw on the research of noted nutritional experts. Today we turned to Dr. Michael Greger https://nutritionfacts.org/video/dr-gregers-daily-dozen-checklist-2/

The salsa recipe we used came from THE PLANTPURE KITCHEN by Kim Campbell:

One mango, pitted, peeled, and finally chopped. 1/4 cup finely chopped red bell pepper. 1/4 cup finely chopped red onion. Three green onions sliced. One jalapeño pepper seeded and minced. 1/4 cup chopped fresh cilantro. 2 tablespoons lime juice. 1 tablespoon lemon juice. Salt and pepper to taste.

It tasted fresh and delicious in toasted tortilla bowls of beans, rice, corn and salad makings.
