Disarming Gazpacho

This refreshing summer “salad soup” is so easy to make that even a one-armed granny can pull it off without help! But that’s not half the story. This luscious combination of veggies is loaded with bone-building nutrients which is of special interest to me. According to the Physicians Committee for Responsible Medicine, “By eating a varied plant-based diet, you’ll get all the calcium you need to build strong bones without the added health risks of milk and other dairy products.” https://www.pcrm.org/health-topics/healthy-bones

So it’s no meat OR dairy for me. I’ll be feasting on lots of tomatoes, peppers, cucumbers, squash, kale, onions, garlic, lime along with fresh corn on the cob, baked potatoes, grilled mushrooms, heaps of baked beans and fresh peaches the rest of this overheated summer.
