Plate of Polenta

The UN IPCC (Intergovernmental Panel on Climate Change) is urging people “to shift their diets away from cattle and other types of meat.” But how will we fill our plates and our bellies?

My husband and I have been exploring answers to this question for the past 8 years. We’ve discovered many delicious, satisfying and surprisingly easy dishes, among them, POLENTA! Coarsely ground bits of corn boiled in water for 10 minutes until firm forms the base on which to serve everything from chopped veggies with marinara sauces to sliced fruit and nut milk.

I’ve included a quick and easy recipe for 6 servings. We topped ours with fresh farmers market eggplant, peppers, onions, and tomatoes seasoned with herbs and chopped garlic. Enjoy!
