EAT THE RAINBOW

You’ve heard it said “Eat the rainbow” and that’s just what we did in class #3 on PLANT-BASED EATING FOR PERSONAL AND COMMUNITY HEALTH. First we heard from Dr. Michael Greger, author of HOW NOT TO DIE and the HOW NOT TO DIE COOKBOOK as well as creator of the outstanding site https://nutritionfacts.org, at his TEDxSedona TALK on Food as Medicine https://youtu.be/xnKaOL2IBPY 

Then we created a colorful slaw with a variety of favorite vegetables. We chose Napa cabbage, Radishes, green onions, carrots, purple cabbage and a mix of cruciferous vegetables. The tofu-based dressing added an Asian twist with flavors of fresh ginger, garlic and soy sauce (we used Braggs amino‘s for the soy sauce). Delicious topped with toasted slivered almonds!
